How is everyone doing today?

I made a wonderful home made Lasagna the other night and I felt I should share the recipe with y’all.

 The sauce:

1 lb Hamburger or Turkey

2 jars of crushed organic low sodium tomatoes

1 red bell pepper diced

1 green bell pepper diced

1 med. zucchini chopped

1 med. onion

6 nice size mushrooms

2 cloves of garlic or to your taste (I call garlic a spice… FYI)

1 tblespn oregano

1tblspn basil

1 tblspn garlic powder (not garlic salt)

2 cups shredded part skim mozzarella cheese

1- 9 oz package of frozen spinach (optional)

2 cups Fage fat free greek yogurt

2 cups low fat/ fat free cottage cheese

1 egg

1/4 cup parmesan cheese

16 pieces Ronzini Healthy Harvest Lasagna noodles 

brown hamburger/turkey, drain grease. Set hamburger/turkey aside, in 1 tblspn of evoo (extra virgin olive oil) sauté veggies and garlic, in a large pot combine browned hamburger/turkey, veggies, tomatoes and spices. Cook until veggies are still firm and not mushy, about 20 mins. Or you can cook them to your liking.

Boil lasagna noodles for 10 mins add evoo to your water so they don’t stick together, add them slowly to the boiling water one by one and then strain and separate on wax paper so they don’t stick together. The recipe calls for 16 Ronzini healthy harvest lasagna noodles.  

 Cottage Cheese & spinach mixture: Mix in bowl 1 egg, 2 cups fat free cottage cheese, 2 cups of Fage fat free Greek yogurt.

You put spinach in now if desired. (1- 9 oz frozen spinach, heat and drain liquid, then cool and mix in)

Heat oven to 350, spray 15 X 11 X 2 baking dish with pam cooking spray, (or your fav. brand)

use 1/4 cup of sauce in bottom of pan, arrange noodles on top of sauce, evenly spread cottage cheese & spinach mixture over noodles, ( if you want to make more layers use half of the cottage cheese mixture) use 1/4 cup of mozzarella cheese, and 1/2 of parmesan cheese, add another layer of noodles, then sauce, continue until all is gone or as much as you want to prepare. then last layer finish off with mozzarella cheese and the rest of the parm.

Cover with foil and bake for 40 mins. take the foil off and bake for another 10 to 15 mins. to brown the cheese just a bit.

Let lasagna rest for 10 mins the cut and serve
